To make this colourful recipe, choose fresh vegetables and quality fish.
- The Fish: 2 beautiful fillets of wild Mediterranean sea bream .
- Seasoning: The Chef Mauro Colagreco's Menton IGP Lemon Olive Oil . Allow approximately 6 tablespoons for the sauce and a fishnet .
- The Garnish (Virgin Sauce):
- Peppers: A mix of red, yellow and green peppers (about half of each for color) .
- Onion: 1/4 of a white onion, diced .
- Garlic: 2 cloves, germ removed .
- Tomatoes: A handful of cherry tomatoes (with pulp and juice) .
- Herbs: A few parsley leaves (without the stems) .
- Salt and pepper .
Step-by-step preparation ✅
1. Prepare the Virgin Sauce
The key to a good virgin sauce is cutting the ingredients into brunoise (small dice) to add crunch. .
- Dice the peppers, onion and tomatoes into small cubes of about 1 cm .
- Mince the garlic and finely chop the parsley. .
- Mix everything together in a bowl and generously add 5 to 6 tablespoons of Menton Lemon olive oil. .
- Leave to marinate in the refrigerator so the flavors can infuse. .
2. Prepare the Sea Bream
Place your fillets in a dish and coat them with the lemon-infused olive oil. . Gently massage the flesh ("caress the sea bream") to ensure the aromas penetrate fully. . Add salt and pepper .
3. Perfect Cooking
Heat a frying pan over medium-high heat (thermostat 7 on induction hobs). . Grab the fillets skin-side down first, then turn them over flesh-side down . Allow approximately 5 minutes of cooking time per side .
4. Training
When ready to serve, add a drizzle of fresh oil to the sauce if it has thickened. . Coat the side of the sea bream with the virgin sauce to show off the beautifully cooked fish. .
