- Liquid: 1 bowl of lukewarm water.

Step-by-step preparation 👨🍳
1. Prepare the Sourdough Starter
Start by dissolving your sachet of yeast in the bowl of lukewarm water with the salt and sugar. Mix well. Leave this mixture (the sourdough starter) to sit for 30 minutes to activate fermentation. .
2. Kneading
In a large bowl, pour the 500g of flour and make a well . Stir in 8 tablespoons of olive oil with the lovage and your sourdough starter mixture . Mix with a wooden spoon, then knead by hand on a floured work surface for 10 minutes until you obtain a nice ball. Let the dough rest under a cloth for 1 hour 30 minutes . 3. Shaping and Second Rise
Oil your baking tray (always with lovage oil) so that nothing sticks. . Place the dough on the baking sheet, spread it out with your hands to fit the shape of the sheet, and let it rest for another 30 minutes. .
4. Cooking
Preheat your oven to 190°C . Before baking, make small holes with your fingers all over the surface of the dough to give it its typical shape. . Brush generously with olive oil and add a pinch of fleur de sel. Bake for 25 minutes . Cooking tip: Halfway through baking (approximately 12 minutes), remove the focaccia, brush it with a little more oil, and finish baking for a golden and fragrant crust. .
